COMENIUS PROJECT 2009 – 2011 “Youth and ICT”

Part one:






HENNEF COMPREHENSIVE SCHOOL has selected „Chicken“ as one of the basic and one of the most favourite ingredients in our kitchen. It has only got a little bit of fat but a mass of protein. Best of all is the fact, that it can be prepared in various ways and allows a variety of methods to cook it.

General information:
Chicken meat is increasingly popular, even here in Germany.
Nevertheless, we are at 9.9 kg average annual consumption per head is still 40% below the EU

average.
More and more we consume too much pork and beef.
Worldwide, we have seen in the EU still has the lowest consumption.
That is about 50 kg per capita.
Chicken are juveniles, both male and female.
They are slaughtered at the age of 6 to 8 weeks.
Chickens are male (rooster), they are slaughtered to meat in the age of about 80-90 days.

The biggest producers are: USA, Brazil, China, EU.
75% of production takes place in chicken fattening farms.

Chicken farming, raising and different kinds of chicken:

Chicken farming and raising:

There are 6 different kinds of chicken farming: Free land farming, open air enclosure, intensive livestock farming, small –group- living and caging.

The freedom to move and the food they get make all the difference to them. This reduces the level of stress for the chickens.

Different kinds of chicken:

There are 5 subspecies of the wild Bankivachicken. The chicken we know has got 150 different subspecies. Lots of them are only bred because of their outlook. Others are regarded as laying hens or only live to be slaughtered later.

How to buy a chicken:

If you buy a chicken, you have to be careful where they were raised and where they were slaughtered. It is also important to pay attention to the chicken farming, if they are frozen or fresh.

Ways of cooking:

There are different ways preparing a chicken, for example:

- frying

- cooking

- broiling

- marinating

- crumbling

- frying

- filling

You don`t have to use the whole chicken, you can also just buy part of it.

For example, you can cook a chicken or prepare a ragout as seen below.

You can make a chicken soup if you cook the whole chicken.

You can also marinate the chicken before for a better taste. Marinated and broiled chicken parts are for example Chicken wings.

Another option would be to crumble it and fry it in fat as you do it with Chicken Nuggets (see below).



If you broil the chicken, you usually keep the skin in order to get a nice crust and to prevent drying up. When the chicken is cold you can also use it for a nice salad.

Another option would be to stuff the chicken with vegetables.

To sum up: Because of all this chicken is very much liked with kids and old people. It is also favoured when doing a diet.
